Inulin is a dietary fibre derived from the chicory root. It has
prebiotic activity, low calorie content and low sweetening power.
It can be used to reduce sugar and fat recipes while improving
texture.
Properties: Filling agent, sweetener
Recommended for use: same application as powdered sugar
Examples of typical uses: fat substitution in ganaches or creams,
partial replacement of sucrose in sorbets and ice creams
Sweetness: about 10% of that of beet or cane sucrose.
