1.000 g Biscamix
1.000 g egg
How to prepare
Mix the ingredients during 7 minutes at top speed and 3 minutes at second speed with a whisk.
Spread to 0.5 cm thickness on a baking sheet/paper.
Steam with an open damper before baking!
To avoid a loose top and bubbels.
Baking temperature:
Deck oven 240°C.
Rotation oven 220°C.
Baking time 7-8 minutes.
Release directly from the baking sheet, to keep moist and rolling without cracks.
Cover direcltly with plastic sheets.
Keep wrapped frozen on stock.
